    • Base Materials: made from 5mm 304 Stainless Steel or 5mm powdercoated mild steel. Options based on location. Cooking surface plate made with 60mm granite embedded into special heat conductive mortar.
    • Base insulation: with ceramic fiber blanket and alum sheeting to contain sine wave heat loss. 
    • Oven Dome: constructed from ceramic porcelain high fired materials and set into 2 refractory layers using 304 SS componentry. Dome layers made from specially developed refractory mortar for high strength and water repellent features using similar techniques found in cementous civil water structures.
    • Transitions: insulated with ceramic fiber pyro tape 
    • Componentry: made with 304 Stainless Steel.
    • Mac Tables: made from NZ Macrocarpa and oiled with Watyl Forestwood solvent based oil stain. Tables are customizable.
    • Steel Tables: Steel frame table options available. 
    • Certification: N/A in New Zealand.
    • Flue/exhaust systems: to be developed by local flue installers based on each restaurant design and local regulations. Note: If outdoors, we can supply our own passive rainhat flue system.
    • Fuel: Wood fire: recommend beech, manuka, gum limbs, apple and any dry low resinous wood. Research each species to ensure food and health safety.
