  • Detailed Features

    • Cooking temperature: ranges from 100°C to 500°C.
    • Cooking output: average of 80-100 pizzas per hour depending on pizza style, temperature and size or your pizza bases. 
    • Weight: Oven 500kg | Base: 325kg  | Table: Varies 120-180kg.
    • Base Materials: made from 5mm 304 Stainless Steel or 5mm powdercoated mild steel. Options based on location. Cooking surface plate made with 60mm of granite placed onto brickwork suspended over glass fibre insulation.
    • Base insulation: with ceramic fiber blanket and alum sheeting to contain sine wave heat loss. 
    • Oven Dome: constructed from ceramic porcelain high fired materials and set into 2 refractory layers using 304 SS componentry. Dome layers made from specially developed refractory mortar for high strength and water repellent features using similar techniques found in cementous civil water structures.
    • Transitions: insulated with ceramic fiber pyro tape 
    • Componentry: made with 304 Stainless Steel.
    • Gas burners: Advanzini burners are world class burners that are imported from Italy. Various Options available.
    • Mac Tables: made from NZ Macrocarpa and oiled with Watyl Forestwood solvent based oil stain. Tables are customizable.
    • Steel Tables: Steel frame table options available. 
    • Certification: NZS 5266(Int): 2012 | Assembly cert aproval
    • Flue/exhaust systems: to be developed by local flue installers based on each restaurant design and local regulations. Note: If outdoors, we can supply our own passive rainhat flue system.
    • Fuel: Primary: Natural Gas (2H) / LPG (3B/P). Oven can perform as a multi fuel wood fire & gas simultaneously when gas is running. Or without gas, when the burner cap is in place, the oven can be used as wood fired only.
