This pizza sauce recipe requires no cooking at all, the pizza oven will cook the sauce to perfection. If we overcook tomatoes, they dry out and become too rich, this will overpower the subtle flavors of your pizza as a whole.

A great pizza is not judged by one component but instead it should be a nice balance of base, sauce, and topping. A symphony of flavors where each part speaks in turn. Likened to singing harmonies that are pleasing to the ear... or the pallet in this case.

Ingredients: (makes approx. 10 pizzas)

  1. 800g canned Italian tomatoes

  2. 1/2 tsp salt (to taste)

  3. 1/4 tsp fresh ground black pepper (optional)

  4. 1 tsp dried oregano

  5. 1 tsp dried basil

  6. 1 tsp extra virgin olive oil (optional)

Method

Place all the ingredients into a large enough bowl, then blitz with your stick blender until semi smooth. Leaving a slight chunkiness for texture and that authentic Italian country feel.

Tips for a great pizza using this sauce

  1. Using pizza semolina as your flour, press the built up air in your dough ball to the edges and the pizza and stretch the center evenly until very thin.

  2. Add a shy soup ladle of sauce per 10 inch pizza leaving room around the edge for your air filled crust to rise in the oven

  3. Be sure to add some powdered parmesan cheese to your sauced pizza before any other toppings

  4. Use fresh dough, check out our Pizza dough recipe to discover how we roll.

  5. Do not use too many toppings, 3 max (not including sauce/cheese)

  6. Cook your pizza as hot as you can. Judge your times by how thick you pizza base/dough is. The faster you cook it, the nicer your crust will be. You are aiming for soft and crunchy. See below...
