Pizza Ricotta

To make the base oil;
Put in a blender 1/2 cup of olive oil, a teaspoon of the ground nutmeg and the 3 garlic cloves. Blend for 1 minute and let sit for half an hour before making the pizzas.
To make the pizza;
Use PIAZZA dough for the pizza base. Roll dough out thin and make the base the right size to fit on your pizza paddle. Have plenty of flour under the pizza base before beginning to top with ingredients.
Drizzle about a tablespoon of the special blended oil over the pizza base, keeping it away from the edges. Sprinkle the mozzarella cheese over the base. Now top with the remainder ingredients according to desired taste. Make sure your toppings go right to the edges of the base! Plenty of ground salt and pepper for seasoning. Finally top with a pinch of ground nutmeg spice.
Slide the pizza off the paddle and into the oven, directly on the granite floor. Keep your eye on it as it will cook fast!
